Does the EPUB work on Kindle?

Yes. KDP and Send to Kindle both accept EPUB directly, so the same file that opens in Apple Books and Calibre works for Kindle too.

Can I restyle the HTML or website snippet?

Both are self-contained with their styling inlined, so they work as-is. Open either in any editor if you want to adjust them further.

What is in the JSON export?

Every entry's term, definition, mention count, context snippets, first and last appearance percentages, and any linked aliases, structured for scripts, apps, or e-reader plugins.

Do the formats stay in sync with each other?

Yes. All five are generated from the same reviewed list at export time, so editing an entry updates it everywhere.

What if I only want the list in Word or a spreadsheet?

That is the sidebar's Export row rather than a reader edition: .txt, .csv and .docx of the list as it stands on screen, with no review step. The five editions here are built from the reviewed list instead, carrying your edited definitions and any spoiler level you set.
